The Good Breakfast



Like a lot of people I love a cooked breakfast in the morning but I'm not a fan of that too full sick feeling so on days where I've got a lot planned and want to keep my energy up I head straight for the eggs and here's my little recipe for a quick and easy to make delicious and nutritious breakfast!

You will need:
  • Two eggs
  • 1/4 cup of milk or cream
  • A lemon
  • Pepper 
  • Asparagus
  • Avocado
  • Fresh chives
  • Spring Onions
First off crack two eggs into a bowl or jug, add your milk or cream, squeeze the juice of half a lemon, and a little bit of pepper (salt also if you would like) and whisk until a pastel yellow colour. 
Fill a pan with water and put on the hob to boil, once boiled reduce to a simmer and add your asparagus. (I usually use 3 or 4 sticks chopped in half).
Add a tiny bit of unsalted butter to a frying pan and add your egg mixture to the pan on a medium heat stirring continuously until your eggs start to look scrambled. -This shouldn't take long.

Now check your asparagus, I like mine not too soft but not not hard. drain from your pan and add to plate along with your scrambled egg.
Garnish your scrambles eggs with chopped fresh chives and spring onions.
Pit and slice up an avocado and there you go! Super healthy breakfast!

Health Benefits:

Asparagus is full of nutrients like potassium, folic acid vitamins C and K. Which are great for your kidneys and are also antibacterial.

Avocado's are also full of potassium, folic acid,  vitamin K and a high protein fruit. It's known as a good fat to have in your diet and is also great in smoothies. It can also prevent anaemia and is good for your digestion.

Egg's have all 9 essential amino acids and again is a great high quality protein.
